BAKING | Coconut Dream Cupcakes

Hello! This is going to be my first baking post ever! I love baking a lot, it's really calming and I've gotten to the point where I like to experiment a little bit, but I'm not quite British Bake Off standard yet! For my first post I decided to make something really simple, cupcakes! They combine two of my all time favourite flavours, citrus (in this case lime) and coconut! It's super easy and will probably take less than an hour to make.

Ingredients for Cupcake Mixture: (makes 12)

125 grams self-raising flour
125 grams caster sugar
125 grams soft unsalted butter
2 large eggs
1 teaspoon vanilla extract
2 tablespoons milk
10-20 grams of desiccated coconut

Ingredients for Cream Cheese Icing:

150 grams soft unsalted butter
45 grams caster sugar
300 grams cream cheese
½ lime
1 teaspoon coconut extract
desiccated coconut to decorate

How to do it:

One: Preheat your oven to 200C/400F and line your tin with muffin cases.
Two: Firstly toss all of the sugar, butter, eggs and flour into your mixing bowl and whisk until it's completely smooth. Then whisk in your milk and vanilla extract. I added the desiccated coconut by eye until I thought there was enough to flavour all of the cupcakes. You can add a little or loads if you want to.
Three: When everything is whisked in, place the mixture into the cases, there is just enough to fill each one equally! I tend to put a teaspoon in each one at a time until there's no mixture left and they are pretty much evenly filled.
Four: Put in the oven to bake for 15-20 minutes or until the cupcakes are golden brown on the top. As soon as bearable, take the cupcakes out onto a wire rack to cool down.
Five: The icing is incredibly quick and easy. Just add all of the butter and sugar and whisk until smooth. Then add the cream cheese, coconut extract and squeeze half a lime (again, can be a little or a lot depending on taste!) and whisk again. The mixture should be light and fluffy, if it's a little bit too runny pop it in the fridge for a bit!
Six: Once the cupcakes have cooled completely. Grab a teaspoon or a knife, however you like to apply icing, and pop the cream cheese icing on! To finish, sprinkle desiccated coconut on top!

And that's everything! They're so delicious, the sponge is soft, the icing is sooo creamy and the flavours are just perfect! Let me know if you bake these and if you enjoyed them too!
